The problem, for me, is that I no longer get excited by “wow, what a catch!” Instead, I sit there and casually think “gee, wonder what this will be ruled after we wait for replay.” There’s no immediacy any more.

Right. The real question is whether it’s a game. Poker is a game, it includes wagering. Roulette is simply a wager.

but there’s certainly levels of skill. Roulette takes no skill. Blackjack at least takes a little skill to decide situations like doubling down or splitting, plus perhaps a bit of card counting. Poker takes a lot of skill.
