I’m sure if I kept mine past the head gasket failure I would have started to see some issues with the electronics. I loved having the climate control right up on the dash next to the IP, though.
I’m seeing the red begin somewhere north of 4k. That’s still pretty low, but I expect the redline increases as the engine gets up to temp.

This is pretty much what I do. I incorporate intermittent fasting and some times have a “cheat day” here and there or eat whatever on vacations/holidays, but I stay low carb the majority of the time. It has been great for my health but I sort of stay out of the arguments and advocacy.
