I dislike the animus thing because it takes away any narrative stakes in the game because you’re on the holodeck and not an actual assassin in ancient Egypt or Greece or wherever. I’ve only played the three most recent and would place them in the same order of Odyssey>Origins>Valhalla. I completed Odyssey three times and neither of the other though played them towards late game. 

Go for the one that has the most historical draw to you. For me, that’s Odyssey and classical Greek history mixed up with their mythology to make it a wilder video game. Ancient Egypt is Origins, Valhalla for 900AD England (with a secret side quest that takes you far away) and Black Flag for your inner Caribbean
