If I know I want steak a day or 2 ahead of time, I salt my steaks and pop them in the fridge for a day or two. Dries out the exterior for a nicer sear, and salts the meat down to the center.

This is pretty much what I do, but since I do not have a cast iron skillet, I do it on my kamado grill over ,ump wood charcoal for that wood-fired taste and smell.
