It’s pretty insidious since lay people are pretty bad at understanding statistics and risk. A lot of people would see these findings and think that somehow processed meat increases their changes by 44 percentage points to get dementia.
Statistics are statistics for good or ill. It’s the incentivization of negative practices in the research and media systems that lead to this type of BS getting press releases.

I have an immersion circulator. I love it as a tool, but never use it for steaks because I like the reverse sear method so much better. Easier, and I think tastier. I aim for pulling out the oven between 110° and 115°F.
Agreed on the awesomeness of nuts, but are you saying 20g of protein per 100 calories or grams? For most nuts, I’ve seen about 6g per oz which works out to about 20g protein per 100g of nuts (which should work out to about to about 20g/500 calories).
Roasted/salted soy nuts are delicious and a great source of complete protein (11g per oz). Great hiking snack.
