Does choosing the Atlas path restrict you at all? I’ve seen various answers on this. What I really want is the opportunity to take my time exploring and discovering lots of planets but eventually get the Atlas stone ending, so it sounds like from this that I want to have my cake and eat it too.

You can play offline but you do need some internet connection to get initial info, pretty sure. Also you do miss out on some features, like naming discoveries.
