Ricotta only needs milk and vinegar, no cream necessary. Can’t really use skim though. I once made a batch using discounted goat’s milk, but it was not different enough to be worthwhile unless it’s a good sale.

I once bought because all expenses included, I was paying 30% less to own than to rent. In the same building!! Costs to own were about $800 monthly including utilities, cost to rent was $1100+utilities.

I’ve been to several, in different cities and all highly recommended. They result in extreme bruising and pain preventing me from sleeping for 3 nights in a row. Every time.
