I keep a number of ice cube trays around just for this purpose. I freeze stocks, soups, etc. and keep them in labled ziptop bags. I can defrost enough for a bowl of soup or 2-3 cubes for a sauce.

No rationalization required. Kirkland brand is frequently superior to everything else, the fact that it’s less expensive is a bonus (for full disclosure, I prefer Marzano tomatoes not available at Costco, as far as I know).
