Well, that's the point of sous vide. You don't want to overshoot the temperature, so everything has to come up to the temp, and 45 minutes or longer will get you there. Any less, and you'll have raw egg.

RI has grilled pizza, which is pretty delicious. Also, easy to make at home, rather than getting a pizza oven or converted grill.
Still never had New Haven pizza, but it's on my list. Boston area pizza wins for me.

When I went to Italy, I only had pizza once, at the cafeteria in Vatican City (starving and no other options). It was awful. Hunger is the best spice, but this shit needed another two days of empty stomach to taste good.
