They faithfully recreated a nonsense angry house with legs that punches you from the original. If they’ll do that, there’s no reason they wouldn’t keep the moogle.
Of all the things to complain about Rebirth, its faithful recreation of the Moogle from the Original FF7 is not one of them.

What if that was the central focus of an entire 45 minute dungeon sequence, and you have to interact with it repeatedly”
