Upton’s All Natural Chorizo seitan and Italian seitan. Flavorful, has a meaty texture and chew, doesn’t have a “fake” taste or the overly yeasty umami bomb that too many meat substitutes have (like most of the Beyond/Impossible items). Also good for us who can’t have too much soy.

It seems like it should be so simple to make the perfect grilled cheese sandwich, but I somehow can never get it right. It’s always overdone, or burnt on the edges and cold in the middle, or too dry, or too greasy.

I’ve waited over 3 hours before for Franklin BBQ. If you’re prepared for it, it can be fun. Meet new people in line, drink some beers (they sell beers in line or you can BYOB), and then finally get to enjoy the best brisket. Being in a very hot climate and in a region with some German settler roots, lagers do pretty well in Texas, and as the Austin Beer Guide crew has declared, Austin is a Lager town (they have an annual Lager Jam fest).
