The instructor knows the car and the track and they can see (and feel) what you’re doing. They’ll know well before you will if you’ve set yourself up properly for the next turn.

Except that they do play it safe. Many places include simulator sessions before you even sit in an actual car. Once in a car, the first lap may be the instructor driving or the guest driving but under strict instructor direction.
