Depends the on the car, but usually its gearbox in neutral and foot fully off the clutch.
I would use the clutch technique in manual cars with start-stop to avoid the engine shutting off in inconvenient situations (such as roundabouts or when merging).
In my M140i I play “slowing down slowly” (meaning that I won’t come to complete halt before the car starts moving again) just to get the engine “not to stop”.
Except if said car is an Alfa Romeo.
