I usually come in around the 30-35 minute mark, but I'm usually cooking for at least four people. Even if I'm just cooking for myself, I end up cooking that much because I can eat risotto for days. Quite literally. So I always make enough for leftovers. :-)
I did one once with a fish stock I made, in part, with a blanched salmon steak and a few fragrant additives like lime zest and a bay leaf. You remove and set aside the salmon once it's cooked, then crumble it on top of the rice at serving, or stir it in just prior to serving. It was very yummy.
I was able to find carnaroli rice once, just once... The very first time I ever made risotto, and it was fan-fucking-tastic. Ever since then all I can find is arborio. Yeah, the risotto is still good, but making it with Carnaroli has become like an Italian nirvana I'll never get to reach again.
