Most Thanksgiving dishes are very forgiving, if not ideal, at room temperature (think about how good the leftovers still are later that evening). And if the gravy you put on everything is warm, that also helps.

Oh shit, that was 1994. Well, that’s what I get for commenting before my first cup of coffee.
No, you are not. If you don’t do this already, you should start putting sour cream on your pancakes and waffles, then adding fruit/honey/syrup (or if you want a savory version, a chopped tomato-cucumber-kalamata olive salad). The taste and texture it adds are great, and it has the added benefit (for me, at least) of…
Great article, but am I missing something here? There *was* a strike in 2004, right?
One of the annoying (as opposed to soul-crushing) things about the cost of living in NYC is the inflation in Taco Bell prices. I know that it’s not great food, but for regular non-NYC prices it can’t be beat. When the local franchises up the price of the $5 box to $8, or a regular taco to $2, they lose all appeal.
They’re only made to stay if they want the employee discount. No employer is required to give a discount, so they can implement it however they want. It’s certainly not the best way to treat their employees, but also certainly legal.
Maybe? I haven’t seen the ATK/CI pizza articles that predate the MS one.
Yeah, I’m staring to think about getting another one. It’s hard to feed more than two people when you can only make one pizza at a time. We’ve had friends/family over for pizza and I end up spending the whole time in the kitchen (studio apartment so there isn’t a counter for people to crowd around while I assemble…
The culinary world is as guilty as anyone else when it comes to perpetuating bad science myths. Alton, Kenji, McGee, etc. still have work to do.
What temperature is your dough at when you roll it out? It might take longer than you think for the center of the dough ball to reach 75 without a water bath.
The warm water is absolutely key. Milk Street (Christopher Kimball’s post-America’s Test Kithchen/Cook’s Illustrated project) had an article last year that said the single most important factor in getting the right consistency of the dough was its temperature at the time you roll it out. Having it above (I think) 75 F…
You can reheat steak with a sous vide. Just set it to the temperature you want and it won’t go above that.
Being able to fart on command sounds like a really lame superpower at first, but I’m beginning to reconsider. Correcting children’s behavior, punishing assholes on subway cars who take up too much room, etc. There have to be more uses I can’t think of yet.
Hold on. I cook a lot, and agree with Dean and P.S. and HfM and you for the most part. It drives me nuts when my SO uses the shitty dull santoku for everything and leaves dirty knives sitting in the sink. I sold Cutco knives one summer and I’ve joined a Kickstarter for a chef’s knife. But I cut bagels the same way…
Seriously. How could the Yankees live with themselves after taking on Papa John’s as a sponsor (even before Schnatter revealed his true self). It’s not like they needed those extra PJ dollars *that* badly. Even Famous Famiglia was better.
Well done; it can be hard to strike a balanceo between cleverness and obscurity with bi-lingual retruécanos.
That (probably) was illegal and depending on your state’s laws (and what you can prove) that contract may be void. I would recommend contacting your local bar association and asking if they have a legal referral service to help you find someone who will take the case pro-bono or on contingency. It may not lead to…
There are some cheaper options (Trader Joe’s, Western Beef, sometimes the sidewalk produce stands), but in my experience WF is actually pretty reasonable compared to many other grocery stores in NYC (e.g. Gristedes, Food Emporium, etc.), especially if you stick to their store-brand stuff and non-organic produce and…
While all of them are 100% inexcusable and inappropriate (at best), in the other instances I can at least envision how someone on an ego trip or under flat-out delusion could think the victims liked or consented to his actions. In that case he just seems like a jerk, or to be more cynical, it possibly stands out b/c…
