Ah yes. I misunderstood. But, yes, she probably does have to tip out a percentage of her tips. Sometimes the restaurant determines how much based on your sales and sometimes you decide yourself depending on how much they helped you.
Unfortunately, she does. In all my years as a server, though, you really only have to claim your credit card tips since those are the only ones that have a paper trail. I'm also not familiar with too many servers being audited.
It depends on how the restaurant's policy is (some, all tips are pooled and shared) but every one I ever worked at, whatever tips you get are your tips to take home. You have to claim your tips at the end of the night before you cash out, but obviously, there's only a paper trail for the credit card tips.
