I’ve never been a fan of the Countryman to begin with. I really like the Clubman and came pretty close to getting a Cooper (decided instead to forego getting a new car at all for now). Maybe the Clubman is worth looking at if you feel the Countryman has gotten too big.
Mini’s advantage in terms of value is that the options are ala carte. If I want LED headlights but don’t want/need a backup camera, upgraded audio, etc. then I can get just the former and forego the later.
Not necessarily. Mini’s options are ala carte, whereas most competitors are confined to trim levels and packages. Meaning if there’s an option you want that’s only offered in higher trims, you’re stuck paying thousands more for extras you don’t want or need.
Other premium cars that come with leather seats and moonroofs standard start at $32k+. Would you really prefer Mini include them as standard and jack up the base price to that level, rather than allowing you the option to leave them off?
If they’re more concerned with driving enjoyment than needless add-ons like leather and sunroofs, they sure will. I know I am.
I already said they’re pretty affordable if you don’t option the hell out of them. Yeah, options like lounge leather seats and panoramic sunroofs are expensive, but you don’t really need them. If you think anyone is cross-shopping a Cooper with an Accord or Jaguar XE then I’m wasting my time here.

Eh, BMW doesn’t really have anything comparable to the Clubman either. It’s a six-door wagon with dimensions similar to a VW Golf.
