Who is cooking the dark meat? I’m just curious since I’ve definitely had under-done thighs and yes, they aren’t very pleasant. Thighs need to reach 180ºF whereas breast is only 160ºF. If someone is cooking them at the same time (like a whole bird) and don’t ensure the thighs are at 180, they’ll have a bit of a bloody…
I’m pretty sure 180 is the recommended safe eating temp for dark meat.

I have a freezer (fridge) and chest freezer full of meat that I never cook. I just can’t seem to plan ahead enough to get something out to thaw. Actually... most of the stuff ended up in the freezer because I bought it fresh, then realized I’d not use it before it went bad, so into the freezer it went.

I would think that the potential for damage to the hood would be a bit of a drawback for service. Gotta be careful lifting it off. Then once it is off, gotta put it somewhere. Then you gotta be careful putting it back on.
