I'm guessing that the weight will be shaved all around, so the distribution will stay pretty similar. If the body panels are all losing weight, the affect should be pretty evenly distributed.

That's the exact opposite of my advice. If anything, I use a lower gear to get more engine braking and discourage me from going too fast. Accidents probably aren't going to happen because you lost traction while accelerating, they will happen when you're fruitlessly attempting to slow down or turn.
