Yeah, people HATE it when you correct them, or try to figure out the motivation for their complaint. I have had people lecture me about so, so many things that they were dead wrong about ("there is no such thing as this kind of mushroom that is sitting on my plate right now") or get offended at further questioning

People working in food service understand "I have a medical condition aggravated by ____." In my experience, it's the customers who don't understand the difference.

Former vegan-restaurant server here, with similar clientele. The soy thing, while not an allergy, is legit— tempeh is much easier for some people to digest than tofu. Fermentation breaks down some of the more difficult-to-process enzymes.
