Artoo has never been wiped. All astromech droids can hack systems but IIRC droids who have developed personalities (like Artoo and Chopper) are more effective at it because they can draw on their experience and the creativity the’ve developed over time.

You and your friends are both correct. The Dathomir witches are a different species from the Zabrak that live on their planet (and who themselves come from Iridonia). Apparently the Zabrak on Dathomir are sometimes referred to as Dathomirian.
