Sure, and I recall doing that from time-to-time (I no longer have an iPad), but the text copying in iOS was (still is?) a clunky mess, so I just put up with Safari more often than not. I suspect the vast majority of users, having less patience for, and knowledge of, work-arounds than myself, would do the same.

It is, and I did use Chrome on my iPad, but whenever links are clicked from another app, it launches Safari. Most of the time that was a minor annoyance, but email links not opening in the browser where my passwords were stored and I had active sessions seemed like an unnecessary pain in the ass.

You are unable to set them as default, and Safari is given access that other browsers don't have in iOS to make sure it is always the fastest when tested. The differences between the two cases are mighty thin.
