From what I've seen E. Cole has a really different moveset but yeah I'd've preferred another character seeing as this is the first series to have two characters. Most secondary characters are integrated into other's movesets.

It's an anime style representation of a loud shout. Maybe a garish swooshy line background would've made it clearer but those didn't appear in Dragon Ball as much as you'd think.

I agree that dedicated handhelds are still valid for one simple reason.

It'll still save money in trashed hotel rooms.

I think a big part of Miku's success is that because she's not a real person all you have to sort out is licencing issues to use her. No scheduling conflicts, requests for ridiculously expensive booze, trashed hotel rooms or creepy stalkers like flesh and blood stars.
