I'm not sure exactly of the physics behind it, but it would seem that how much throttle you have when the car is in the air affects its attitude on landing (other than McRae, I've also heard Pastrana mention this somewhere on Youtube before).

As the driver of a W201, I feel you hit many of the issues with the car bang on the head (the one in my family suffers much of the same, except ours is the 2.0 carburetor M102) . Costs too much to maintain and fuel up, but it does feel a bit special when you're out and about.
