For E-Ink yes you are correct. E-Paper is just LCD, so no.

This is weird because my standups involve at least *SOME* interaction from other members. The whole point is a quick pulse check to make sure things are running smoothly. That often requires other people... talking.

Yeah this sounds like E-Paper which, of course, gets confused with E-Ink but in reality is a low-power LCD solution that still has similar power saving methods (it can save states and be low power when they’re not changing, but not no-power like E-Ink).
