No, serving the diner both ketchup and mayonnaise is correct. That way, the customer can choose. And if they want it mixed, use the first fry to stir the two together.

Europeans do mayo because their mayo is somehow perfect for fry dipping. American mayo is not, for some reason, as I found out when I returned from overseas. The flavor profile and texture is different, which makes a huge difference.

How are you roasting turkey/chicken? When I roast either, the skin gets crisp, but it’s super-super thin and thus never really crunchy. The rendering process takes all the body out of the skin (unlike, say, pork skin, which will puff up).

For egg salad, the most effective is an egg slicer. Slice the egg, then turn it 90 degrees to dice it.

What is a pastry cutter? This is a serious question.
I cook, I make pastry, but I have never come across such a device. A sharp knife is what I use to cut pastry with. Is a pastry cutter like a pizza cutter?
