A lot of times they will have a sticky at the top with basic guides and how-tos. Some of them will have a link to a Wiki, which is more like a manual. There are eBooks on Linux in general, but the ones I've looked at were too broad for my tastes.
Sorry I just realized you were asking for resources, not distro recommendations. Like Weasel said, the best way is to try a distro, then head to the forums. You'll learn things much faster that way.

PCLinuxOS is a great distro for newbs. If you're looking for something Ubuntu-based, go with Mint. Something with a KDE desktop will look more familiar if you're coming from Win.

I like it a lot so far. It came with a 30-day Prime trial and it streams vids really well. I'm afraid I might have to sign up when the trial is over. As far as games I've tried Where's My Water and SimCity and they're both great. For just reading, I think the original Kindle screen is easier on the eyes.

Installed PCLinuxOS on my parents desktop a few years ago during the holidays. Occasionally I have to walk them through installing a printer driver, but it definitely beats the bi-annual spyware removal. They prefer it now.
