Truth be told I’ve never had a tamale. I went vegan before I had the chance of trying one so I have no baseline for comparison.

1. Suspiria

I will be making tamales tomorrow (first attempt wish me luck). The filling is poblano peppers, crimini mushrooms, onions, garlic, spices, and vegan chiriso. I reduced all of that in some smoked paprika and Omegang Rosseta beer. I couldn’t get corn husks to steam them in so I picked up bamboo leaves at the local Asian…
