I would argue, as I do most things, release order is the way to go, the Reboot movies are pretty obtuse even by Evangelion standards. 3.0 is deeply confusing and while 3.0+1.0 does clarify its also a nearly 3 hour movie. Basically, the rebuilds total are most of the length of the original show.
