That really depends on the director. Big enough names can tell anyone what to do; the problems occur when you have a less-accomplished director in charge of a big star. Not all big name actors seem to get that way though; there’s more than a few A-listers who actually have reputations for being cooperative.

I agree. No more “The Doctor is Space Jesus and running away with him and abandoning everything changed my life” and no more “this person is a riddle that I must figure out!”. Just give us an ordinary person who goes on to do amazing things with the Doctor but still wants to live their own normal life.
