Very informative! I’ve never had aguachile. I’ve also never had raw shrimp. I love sushi and ceviche, but I feel a little squicky about raw shrimp (probably because I’ve cleaned a million of them, since we live on the Gulf Coast). 

I buy Genova yellowfin in olive oil. It tastes like...tuna, the fish. The texture is flakey, not mushy at all, and there are some larger pieces. It has the right amount of salt, and it’s affordable and widely available.

In lots of stewy dishes I replace meat with mushrooms anyway. Mushrooms are a great base for a moc shepherd’s pie, for example. I make jackfruit “pulled pork” but that takes a lot of work, so sometimes I just fry up mushrooms and onions with some tomato paste and bbq sauce and serve that on a bun with some cole slaw.

I’ve written a number for 5 star reviews for local restaurants that we visit consistently. I always point out the reasons for the high markings and don’t concern myself with any of the other reviews - everyone’s experience varies, of course.

Anything potato...I’m down for it. I have a packet in my pantry for those emergencies when you need mashed potatoes, like, NOW.  I wouldn’t serve them to friends or family, but the belly wants what the belly wants and sometimes a packet of potato flakes does me right.
