I probably haven’t had the good queso fresco - but I haven’t yet figured out what the brands I’ve tried bring to the table in terms of flavor. It seems to be a bland white sprinkle on top of a lot of Mexican dishes. Can someone enlighten me as to its appeal?

I season the fish and then sprinkle it with the Wondra flour - skin side too, if the fish I’m using has skin still attached. Pan sear skin side down.
There is always a bag or two of sweet corn in my freezer. Korean cheese corn? Yes! Corn and cornbread pudding? Yes! Mexican street corn salad? Yes! So many side dishes to compliment just about any meal.

This is an interesting phenomenon, made personal by the purchase of our new home. We will be moving from a home with a kitchen I designed in 1993. I only use it for pan-fried fish - like Eric Ripert. It helps with the sear but doesn’t get gummy or heavy.
