I can't imagine the market for chop-shop parts is very big for GTs and the risk is pretty high because the small number of GTs make them so traceable. Why would they do that?

Well, for one thing the GT40 and GT had very distinctive, underdesigned rear panels. They were flat with round lights. This has a bit of Mustang and a bit of the Aston Martin light shape (though none of that prettiness). It doesn't feel GT-ish
