Actually it annoys me too, mostly because problems for this episode can be rectified with a quick Wikipedia search. It feels like the absolute least they can do as research. For the viral encephelitis, it felt too much like a designed plot device.
I don't get it. Abby and her sister are pretty awesome with almost zero man plots. Plus you have classic fish-out-of-water gags and a hammy walter bishop. What's not to like?

We're also seeing through Hannibal's eyes, as well as the perspective of any character that the camera is following (Bev, Jack), just because he's the central character doesn't mean that there can't be good supporting characters around him.

I disagree, this means that she's too competent and not reckless enough to bring unsubstantiated claims to her boss, but reckless and not competent enough in committing a crime by breaking into someone's house, possibly taking something without a warrant, all without a contingency plan in case something does happen.
Yeah that's started to weigh on me too. This show is repeatedly kept going to the well of using the death of its female cast as emotional fodder.
