Stranger missions are just generic grindy jobs that are given to you, unfortunately. In GTA Online you could disconnect from your network and you’d be kicked into an empty session. Not sure if that still works. But as far as doing missions, you can’t solo them, the game forces you into matchmaking and probably a new session once it starts.
