Try giving mushroom seasoning a try. It’s granulated mushroom extract and salt and is used as an MSG substitute. This could be an umami source that you might be able to tolerate.
Do they have legal standing? Yes and no. Technically once the doughnuts are sold the buyer may do with them as he wishes (within the limits of government’s laws of course). Alternatively, if you don’t want dried out burgers, you can cook them to 140 for 45 minutes in a sous vide. Killing bacteria in meat isn’t just about temperature it’s about time. 160 degrees kills instantly. But lower temps for longer time will do the same thing and be much more delicious.

Yeah, as long as there is a price premium, the general public will not adopt them en masse. The niche that it will fill is for vegetarians and people with high cholesterol to get their burger fix.
