I think a splash of apple cider or rice vinegar mixed into the sauce after cooking would work well in this dish and open up more flavors.

I almost went with “...this was a way to dip his toe in the pool” but that seemed a step too far.

So basically, he was interested in the bar industry and this was a way to get his foot in the door.

I hear ya. I am a religious searer with most meat stews and braises, but this one works! If you reduce the sauce at the end you won’t miss that beefy fond taste from searing. For an acid kick, I eat this with that neon pink Japanese pickled ginger (kizami shoga), which you see with beef curry dishes.

yoooooo, everyone at work is doing whole 30. a woman did whole 30 for a few months and lost a ton of weight but gained it all back because restrictive eating like that is unsustainable in the long term. it’s just bananas.

As a quick comment—there are 2 common kinds of miso you can find in the US, white and red. White has a much sweeter flavor profile, while red is more earthy and savory.

LOL..I ONE thing I have noticed in my travels all over the world, Men seem to have a built in system for spotting this stuff. I can be in Asia, a “HOT” gal walks by, and seems every dude is staring at her, our eyes meet, not one words is spoken and we nod and/ or smile.....yes, we are all dogs.... :)
