Don’t have a sous vide yet, should be getting one end of next month, but I’ve been curious about making Limoncello with one. In theory, you should be able to hold it at a heat that will cause the lemon zest to infuse into the alcohol in a few hours rather than a few weeks.

A legitimate concern?! lol. There have been 35 reported cases of locally acquired Zika in Florida, oh wait a minute, that’s actually the only state to have ANY reports of it. So yea... not seeing it as a big concern in TX or any other state.
