A couple of years ago, I had some leftover creme fraiche after using it in a recipe. I started popping a spoonful into all kinds of sauces and it was revelatory. Pesto? WOO. Tomato sauce? Lush!

I hate the food snobbery that abjures frozen vegetables. Freezing vegetables is GREAT because the flavor and nutrients are preserved, and it’s a way to help cut down on food waste. I can use exactly as much as I need, no more.
My experience, when I pay for it, is indeed valuable. My parents didn’t bring me to fine dining before I was capable of behaving properly.
