I owned retail businesses for 30+ years. At two of my businesses, I’d always plan on closing Thanksgiving, however many employees pleaded with me to stay open. I did this last night, but with filling underneath instead of mixed veggies. The uncooked filling goes into an open ball of foil, with the spatchcock chicken laid out over it. All this into a heavy duty roasting pan. It was delicious and the filling moist and flavored with the drippings.

I recently made Pasta con le Sarde for the first time. It was fantastic. Saffron, onions, fennel, garlic, pine nuts and golden raisins mixed with a few anchovies and two cans of sardines. The bucatini pasta was the perfect pasta for this dish.

But I rather relish Burial and Russian River Brewing too.

Spot on comment!  Wisconsin does provide some great cheese, but so does many other states. Oregon, as well as New York and California, produce some of this country's best blue cheese.
