Personally it was how mysterious he was, how badass he looked, and how he was able to out smart Han Solo and track him down. Plus I love that he semi-threateningly talks back to Vader without being afraid. "He's no good to me dead" would be suicidal to say if it came from anyone else.

The mystery of his limited presence in the trilogy is a gigantic chunk of why people love him. He'd be cool just based on his appearance & other stuff, but the fact that he's a bit of a ghost is what makes people dig him.
