one way to replace iTunes but still be able to back-up to windows is using iMazing.  It works on mac as well but allows more control of your iDevices than itunes and can wifi backup

yeah it is fustrating, i think iMazing does a whole device count, storage pulls from your messages and photos, and photos is photos only. but he backup management of iMazing was the reason i downloaded it and i use it now to replace itunes.

I suggest using iMazing for backing up Apple devices. It gives you more flexibility and allows you to search backups and might allow you to pull data from it.  It’s worth a shot and so far has been worth the money for us.
