For that kinda of money I’d just buy and XJ, enjoy it, and take it to the local mechanic up the block.

When I poach, I can see exactly what is going on with the yolk, and can pull it when its perfect. Timing doesn’t always work with soft-boiled, varies with the size and freshness of the eggs, and maybe ambient conditions in the kitchen. I poach with pride!
That’s what I found out. My mechanic has worked on a lot of them, and agrees with you, but he said they are older vehicles but very complex: two speed transfer cases, turbos at the limit, electric everything except the air suspension etc; things will fail, and parts are really expensive.
If you want both trouble and fun you can’t miss with this 2006 Cayenne Turbo S. 520 hp, 0-60 4.5 seconds, and it’s under $20K. New these cost about $120K , so depreciation is your friend. Remember though you will also be maintaining a $120K vehicle!
