Arnold’s are pretty good too. They aren’t quite as chewy, no, but they are slightly larger and taste pretty much the same. The only difference is texture, and it is slight.

Troyer’s makes a Carolina Reaper cheddar that is both painful and addicting. The reapers are, well, reapers, but the fat in the cheese moves the heat along in a minute or two instead of five. I get it when I visit Pittsburgh, at Pennsylvania Macaroni. I could order it online, but I’ve balked at completing the order…
