As an Algerian I've had plenty of experience with the 504/505. Quite a few of close family members had one (I'm taking about the 80's/ early 90's). My old man prefered old Simca's though. I've honestly never heard of cilinder head failure in an N9T engine with maximum coolant. But I don't know these engines well…

I disagree. An 'unhealty' coolant level is lethal for any engine. The fact that the N9T tended to have issues when having low coolant is not due unreliability of the engine. As a driver it's your responsibility to regularly check your car. Is it not?
That's correct! But often causes by the owners own negligence. Always make sure that the engine has plenty of coolant and a regular valve adjustment ensures a reliable engine. The valve adjustment also helps since it's quite a noisy engine.
