When I have a 5 pounder and the time

Between canning and freezing, we’ve only had to buy vegetables a couple times in the past 6-7 months. It’s been great

Canned potatoes are the shit! Back in the day when I was dirt-poor, I could get a large can for less than a buck...a nice scoop of butter and a pinch of salt, toss those bad boys in the microwave for a few minutes, then mash with a fork. BOOM! Now you’ve got a giant bowl of spuds for pennies on the dollar.

I learned last year when my wife got really into canning and did some potatoes. They’re super convenient, since they’re already cooked you can make potato salad in a few minutes or fry them up or warm and mash.

“Canned potatoes” makes me think of one of my favorite cheep meals from my bachelor days. (Any my current ‘wife is out of town’ days.) One of my favorite ingredients to keep around the pantry is Wondra flour. It’s a wheat flour that’s been pre-cooked and dried and comes in a canister with a shaker top you can also spoon out of. Works great by itself, or you can do the butter/flour thing with it if you need fat in there as well.

Some kind of acid goes good with boiled egg (I guess walnuts are a bit acidic from tannic acid). Sometimes I mix a bit of olive oil and mustard to go on a hard boiled egg, along with salt and pepper. I guess you could called it a quick or deconstructed deviled egg.

When you boil your food such as pasta

i’m assuming salty pasta water is bad, but pasta water that hasn’t been salted is fine, right? (but who doesn’t salt their pasta water?)

Yeah I like to obliterate them in the air fryer until they get all jammy. It’s so good.

Do you also lose a dish when that happens?

Then use what you love! I have yet to find an olive oil I’m in love with, but I’m going to try the $14-bottle Jim sells at his store in Portland. (I’ve bought butter and wine from him and both were excellent.)
