I’ve done this too with the pre-peeled stuff though really, breaking apart a head and shaking the cloves in a glass jar for a minute peels them easily when I’m out of the bagged stuff.

I keep my bacon fat in the fridge, but pour it through a small square of cheesecloth first. It’s not the fat, it’s the bits and pieces of bacon that make it go rancid so quick. If you filter it first, it will keep for months.
