I agree that oxtail would be an excellent choice. You could do a traditional oxtail dish with perhaps sous vide polenta and some kind of reduction as a sauce, or you could also do an oxtail based bone broth. Both would be interesting choices.

Meal in a bag absolutely needs to be done. Something where I can get everything in the bag ahead of time, fire up the anova when I get home, and then pop the bag in and take the dog out for a walk so a nice dinner is waiting for me when we get back.
