What you said is spot on. They do seem to have a narrow window between undercooked and gummy. One 8 ounce box of Banza gets bulked out to 6 or more meal servings for me with extra protein and veg that I often try to cut in a shape that sort of mimics the pasta shape.

These are the only kinds of pasta I eat. Are they less than ideal, yes. Is it better than no pasta at all because I have to manage blood sugars for diabetes, yes. Most gluten free marketing is just pandering but these have real value if you have to manage carbohydrate intake for medical reasons.

There are few chicken applications that would still be great at that level of charring but a yogurt based marinade that’s clingy like some tandoori is one. It’s the coating that’s getting a little char not the chicken. But that’s a very specific application.

The first thing I thought when I saw this, isn’t there some high tech car manufacturer already doing exactly this? I just couldn’t remember the name off the top of my head. 

I have the same model and did a shitload of research before selecting it. I use it far more than my full sized convection oven because it just feels better when cooking for one than heating up the full size. Still, it can bake a 9x13 baking dish, regular pan of muffins or a bundt cake just as well as the full oven.
