I would argue that that probably depends on the knife. Bread knives are a little more utilitarian, you aren’t going to be using it the same way as a chef’s knife for instance. I do agree that cost doesn’t always equal quality, but often quality demands a higher cost.

I think the most intimidating thing is feeling like it’s unclear what I actually need to really get started. I like to feel like I have all the proper resources at my disposal before I start something new, so that I know if I don’t enjoy it’s not because I’m missing some crucial piece.

Can you compare to Southwest? Because I always fly Southwest, they have free snacks, free in flight tv and movies, and internet is like $5. Add all that to the solid customer service and and bags fly free, and I have a hard time wanting to go somewhere else.
